Festive Vegan Gingerbread Recipe

If you’re looking for a recipe that’s super easy and fun to make, then we have the perfect festive vegan gingerbread recipe for you to get creative with!
Time to make: 32 minutes
1tbsp Linwoods milled organic flaxseeds
140g dairy-free margarine (We love Koko)
100g Queenswood dark muscovado sugar
3tbsp golden syrup (We love Rayner’s Fair Trade and Organic Golden Syrup)
350g plain flour, plus extra for dusting (try Doves Farm Freee Plain White Flour – also Gluten Free!)
1tsp bicarbonate of soda
1tbsp Queenswood ground ginger
2tsp Queenswood ground cinnamon
Now for the fun part…
STEP 1 to make your festive vegan gingerbread…
Mix the flaxseed with 2½ tbsp water and leave for 5 minutes to thicken. Meanwhile, line 2 baking sheets with baking parchment. Then, in a pan, combine the margarine, syrup and sugar and melt over a low heat, before transferring to a bowl and leave to cool down. Once slightly cooled, stir in the flaxseed mix, flour, bicarbonate of soda, spices, and a pinch of salt until it comes together into a smooth dough. Pop it in the fridge to chill for 30-45 mins until the dough becomes firm.
STEP 2 to make your festive vegan gingerbread…
Heat the oven to 200C/180C fan/gas 6. Lightly flour a clean surface and roll the dough out so it’s about 5mm thick. Now for the fun part! Stamp out as many gingerbread people as you can (you can easily purchase these online). With the remaining trimmings, re-roll these and continue the process again until you’ve used up all the dough. Once you’re happy with your selection of jolly gingerbread characters, place these on the baking sheets and bake for 12 mins until golden. Leave to cool for 10 minutes then transfer to a wire rack to cool completely. É Voilà! Tuck into your delicious, vegan gingerbread biscuits.
Storage: keep in an airtight container for 2 weeks.
